Srijohn Mandal, a Red Seal Certified Journeyman Chef, began his culinary journey with a graduation in Hotel and Hospitality Administration from the Institute of Hotel Management Catering Technology & Applied Nutrition, Kolkata, WB, India, where he specialized in European Cuisine. He completed his degree in May 2005.

In August 2013, Srijohn received his Red Seal certification in the “Cook” trade from the Alberta Provincial Government, Canada. He also holds a Certificate of Food Sanitation and Hygiene issued by the Government of Alberta, Canada, and has successfully completed WHMIS Training, holding a Certificate of Completion issued by the Alberta Hotel Safety Association.

Srijohn’s culinary expertise spans American, Canadian, Continental, and European Cuisine, and he has a good knowledge of Italian, Continental, Mediterranean, and Lebanese cuisine. He also has knowledge about Hazard Analysis & Critical Control Point (HACCP).

Srijohn started his professional career as a Kitchen Assistant at THE PARK, Kolkata, in September 2005. He then moved on to work as a Demi Chef-de-Partie at Hotel New Kenilworth, a 4-star deluxe hotel in Kolkata, from May 2008 to December 2008.

In January 2009, Srijohn joined Taj Hotels Resorts and Palaces as a Chef in the Continental section, where he worked as a Chef de Partie (CDP) for eight months.

In September 2009, Srijohn took his culinary expertise to the seas, joining Carnival Cruise Lines. For nearly three years, he served as a chef in the continental section, working as a Demi Chef de Partie (DCDP).

After his stint at Carnival Cruise Lines, Srijohn returned to land-based roles. He served as a chef at Ric’s Grill, Grande Prairie, AB, Canada from June 2012.

In September 2014, Srijohn took on the role of Executive Sous Chef at Sawmill Prime Rib & Steakhouse. For three years, he showcased his culinary expertise in one of the most renowned steakhouses, further solidifying his reputation in the industry.

In January 2017, Srijohn stepped into the role of Franchise Director at Europa Meat Shoppe. His leadership skills and business acumen were put to the test as he navigated the challenges of managing a franchise.

Just a few months later, in April 2017, Srijohn became the independent business owner of Europa Deli & Sausage Hut in Grande Prairie, Alberta. His dedication to quality, authenticity, and community has made the establishment a local favorite.

With over 20 years of experience spanning various 5-star hotels, steakhouses, cruise ships, and his own business, Srijohn Mandal continues to serve his community with high-quality, authentic European food at Europa Deli & Sausage Hut. His journey is a testament to his passion for the culinary arts and his commitment to continual growth and excellence.
